Earlier this week, I wrote about my decision to become vegan, which has been a fantastic journey thus far. But one of the things that proved to be a challenge initially was finding new things to cook every week, especially when cooking really isn’t my thing (although I am slowly falling in love). So, I consulted my good friend Google and searched for “best vegan bloggers”; obviously, there were many. But, I found three that I go to on the regular, as their recipes are simple, so tasty and made with a variety of everyday ingredients.
My husband actually introduced me to the “It Doesn’t Taste Like Chicken” blog. Sam is a fellow Canadian and based in Toronto like me. So, all the ingredients/brands she references are always easy to find in my local grocery store. Her Instagram account is filled with so many recipes, and she is consistently creating new ones and letting her followers in on the process through her Instagram stories. She also has a cookbook that includes recipes for many vegan staples (like cheese and it’s so simple to make) and also has photos for every recipe, which I LOVE! Because I want to ensure my finished version looks as it should. For example, I recently made her BBQ chickpea salad for dinner and mine turned out pretty good in comparison (definitely a sign of a good recipe). Anyway, vegan or not, she has incredible recipes that your whole family will love. Follow her on Instagram if you don’t already, as she is awesome.
I discovered Nora Cooks through Pinterest, and my daughter’s name is also Norah (so I was instantly intrigued – LOL). One of the things I love doing on the weekend is making a big breakfast. However, now that I am vegan, I am always searching for new breakfast recipes. Nora’s vegan banana pancakes have become a weekend staple in our house; they are so fluffy and so flavourful. On her blog, she has so many easy recipes that can be whipped up in 30 min or less (some take longer), but most are short. I also love her desserts, her vegan chocolate peanut butter bars are amazing! I highly recommend following her Instagram for new recipe ideas.
I discovered Vegan Travel Eats through an Instagram photo that showed up on my explore page. I was instantly drawn to the delicious food photos she has on her feed. I love to travel. So, I think it’s really cool that her recipes are inspired by the places she visits. On her website, she also has vegan city guides that give you the rundown of where to eat in cities like New York, Toronto, Chicago and more. She makes some delicious comfort food, and I recently made her creamy roasted red pepper sauce for my pasta – it was delish! Her Instagram definitely makes me hungry, even when I’m not.
